Protein Dessert Ideas That Taste Like a Treat, Not a Supplement

Sunday afternoon, the sun is out and the sweet tooth has arrived. The challenge is finding a protein dessert that feels indulgent rather than virtuous. Many ideas taste like a diet food in disguise, but salted caramel is a flavour that holds its own, which makes it perfect for desserts. Here are three plant-based ideas that taste like a treat.

What Makes a Good Protein Dessert?

A great protein dessert balances three things: texture, sweetness and temperature. Frozen bananas bring creaminess, nut butters add richness and a small pinch of salt lifts the caramel flavour. Keep the powder to one serve per batch, since extra powder can leave a dry, powdery finish.

1. Salted Caramel Nice Cream (Serves 2)

  • 1 serve (50 g) Salted Caramel flavoured plant protein powder
  • 3 large ripe bananas, sliced and frozen (about 360 g)
  • 1/4 cup (60 ml) plant milk, plus extra if needed
  • 1 tbsp (20 g) almond or peanut butter
  • Pinch of sea salt
  1. Add the frozen banana, powder and milk to a food processor.
  2. Blend, scraping down the sides every 30 seconds, until smooth and creamy (about 2 to 3 minutes).
  3. Add the nut butter and salt and pulse to combine.
  4. Serve soft straight away, or freeze for 30 minutes for a firmer scoop.

2. Freezer Fudge Squares (Makes 12)

  • 1 serve (50 g) Salted Caramel flavoured plant protein powder
  • 1/2 cup (130 g) smooth almond butter
  • 2 tbsp (40 ml) maple syrup
  • 2 tbsp (40 ml) melted coconut oil
  • 2 tbsp plant milk
  1. Line a small loaf tin with baking paper.
  2. Stir all the ingredients in a bowl until thick and smooth. Add a little more milk if it is stiff.
  3. Press into the tin and smooth the top.
  4. Freeze for 1 hour, cut into 12 squares and store in the freezer. Let them soften for 2 minutes before eating.

3. Caramel Crumble Baked Apples (Serves 2)

  • 2 medium apples, cored
  • 1/2 serve (25 g) Salted Caramel flavoured plant protein powder
  • 1/4 cup (25 g) rolled oats
  • 1 tbsp (20 g) nut butter
  • 1 tbsp (20 ml) maple syrup
  • 1/4 tsp cinnamon
  1. Preheat the oven to 180 degrees (fan 160).
  2. Mix the powder, oats, nut butter, maple syrup and cinnamon with 1 tbsp water into a crumbly paste.
  3. Stuff the cavity of each apple and sit them in a baking dish with 2 tbsp water in the base.
  4. Bake for 30 to 35 minutes until the apples are tender and the filling is golden.

In each recipe, the protein from the powder is just the powder portion listed above, so a full batch contains up to 34 g from the powder.

Variations to Keep Dessert Interesting

  • Nice cream sundae: layer the nice cream with sliced strawberries and a spoonful of coconut yoghurt.
  • Chocolate-dipped fudge: dip a cold fudge square halfway into melted dark chocolate and return it to the freezer for 10 minutes.
  • Nut-free swap: use sunflower seed butter in place of almond or peanut butter in the fudge and nice cream.
  • Spiced apples: add a pinch of ground ginger or a few sultanas to the baked apple filling.

If your dessert tastes a little flat, a tiny extra pinch of sea salt usually brings the caramel flavour back.

Serving and Storage Tips

  • Nice cream is best eaten fresh. If you freeze it solid, rest it on the bench for 5 to 10 minutes before scooping.
  • Fudge squares keep in the freezer for up to 2 weeks in an airtight container.
  • Baked apples reheat well in a microwave for 30 to 40 seconds.
  • Check any toppings and add-ins for allergens, particularly nuts.
